Moving this from https://gitlab.gnome.org/GNOME/gnome-build-meta/-/issues/764. Currently we install documentation into ${CMAKE_INSTALL_DATADIR}/gtk-doc/html because this is where applications put gtk-doc documentation. But we don't use gtk-doc anymore. gi-docgen documentation belongs in ${CMAKE_INSTALL_DATADIR}/doc
